Figures were obtained during qualitative observations of binary system cocoa butter and carbon dioxide in a high pressure view cell, equipped with sapphire windows and stirrer. Pressures up to 70.0 MPa were applied in temperature range 25 °C to 55 °C. A phase inversion phenomenon was observed at pressure higher than 22.5 MPa and at relatively low temperature of 20 °C.
